Saison

Our Belgian farm house style Saison is bold with subtle spice notes.

As is traditional, this beer is made with an assortment of grains to give it a unique and interesting character. Oats add a mellow smoothness.

Bittering and aromatic hops bring balance, making it a delightfully refreshing ale.

Italian Lager

Italian Lager decal

Crisp and dry with a moderate malt flavour. Slight floral hops help achieve a lightly bittered well balanced lager.

Originally commissioned by Carboni’s Italian Restaurant. The style was a little light on for a craft beer, so was superseded by our Bohemian Pilsner.

A9 to Thurso

Scottish Export 80 Shilling

The A9 to Thurso is full of malt with mellow caramel and light bread notes.
A hint of orange rind adds complexity to the familiar earth and spice notes of English hops.
This is all supported by a smooth clean bitterness which delivers a well balanced malt driven Scottish Ale.

This beer was originally created for GABS 2017. Created using party gyle method where the late runnings of both batches were made into a sixty shilling light ale.

Liam O’Flaherty Irish Red

Liam O'Flaherty Irish Red decal

Like Liam*, this is our first Irish Red. Amber red in appearance, we present a malt driven ale with toast and biscuit notes.
A small addition of roasted barley adds a dry and slightly bitter character.
True to style, we balance this ale with traditional English noble hops.

California Common (Steam) Ale

California Common decal

Northern Brewer hops brings fruit and wood character to our steam ale. A yeast driven dry crispness is rounded by bread and caramel malt notes.
Cross the bridge, enjoy.

Like our ESB, this beer is different to others. The yeast shines, bringing a truly unique flavour profile with subtle tobacco and wood notes (not smoke). These flavours are well supported by the solid malt presence making  this a contender to be brewed again really soon.

Blueberry Berliner Weisse

Blueberry Berliner Weisse decal

Blueberries add a balancing sweetness to this traditional double decoction brew. Light bread notes enhance this refreshing and subtle kettle soured ale.

From the 1970’s the style went from lightly sour to extremely so. Publicans added flavoured sugar syrups to compensate making the beer slickly sweet also.

Our interpretation precedes this era to recreate a subtle fruity sourness that won’t have you pulling faces.

Ginger Beer

Ginger Beer decal

Our first limited release beer is made from fresh ginger root added to the boil for 10 minutes. A warming big ginger presence is coupled with subtle citrus freshness. It is truly a beer for every season.

This was our first batch made on our pilot system and the brewers first attempt at making a beer from fresh ginger root. The brew was overpowering so was cut with 35% South Pacific Ale which added a complementing citrus note. Ten grams fresh root per litre is ample.

Munich Dunkel

Munich Dunkel decal

Our version of this traditional lager holds true to its roots with Munich and dark malt bringing bread toast character with a reddish tinge.
Locally grown Chinook hops used throughout gives balance with herbal, spice and grapefruit notes.
A complex and refreshing dark lager.

We were very excited to create a single hop dark lager using local Chinook hops from AC Hops in Dean. Chinook is such a versatile hop making a delicious, subtle grapefruit forward dark lager.

Cherry Berliner Weisse

Our Cherry Berliner Weisse has arrived in time for Oktoberfest. Using the traditional decoction brew method and kettle souring, this German style wheat ale is fruity and pleasantly sour.

Bohemian Pilsner

Subtle fruity hops are supported by a smooth malt presence giving great body and a clean bitterness.
This Czech style Pilsner is no ordinary lager.

Ahhh Vienna

Vienna Amber Lager 6.4% decal

Using traditional Hersbrucker and Saaz hops we have created a true to style hoppy and bold malt forward amber lager.
A traditional double decoction brew process adds a mellow bread and toast malt character.
The late addition hops keep bitterness low while imparting floral and spice notes. A gentle creaminess keeps the alcohol in check.

Strong Bitter

Strong Bitter 6.1% decal

A somewhat bitter ale is contrasted by a well balanced mix of malt and hops. Subtle spice and citrus-pine notes are combined with a creamy caramel malt profile to create an easy drinking ale.

First brewed by accident when the brewer had a brain fart and totally misread the grain bill for the Saison he was meant to be brewing.
The mistake was realised during the mash. With some rapid recipe development taking place, the hop schedule was modified (obviously) and using available hops, a cracking new beer was created.

Weizen

Bavarian Wheat Beer

This Hefeweizen is made using a traditional double decoction method to produce a characteristic sweet wort, which when combined with German noble hops and Bavarian yeast produces an exceptional Bavarian white beer brimming with pleasant spice and fruit notes.
