We create beer styles from around the world. From crisp, light lagers and pale ales, to full bodied malt forward dark ales.

Our Brewing Process

Cubby Haus Brew House

We use repurposed dairy and industrial vats to create a 3 vessel brew system powered by 2 pumps and a 32kW element. Simple PID controllers are used for temperature control. Brew day is very physical, requiring hoses to be configured for each stage of the brew process. Although quite physical, it allows us great flexibility with the ability to easily setup stepped mashes and decoction brews.

Packaging and Conditioning

Canning ESB

We fill kegs and cans with flat beer directly from the fermenter, which has been dosed with a small amount of dextrose. We use secondary fermentation in our cans and kegs to carbonate the beer. This takes 10 days or so. This approach leads to a deeper, more complex profile than using rapid forced carbonation as used by the bigger boys

End Product

It takes about 4 weeks from brew day to get a finished product. Using classic methods, we produce a superior product made with love and patience. Being conditioned in the can means there is some yeast slurry at the bottom. For a clear beer, be gentle when pouring, although there’s nothing wrong with a cloudy beer, just ask Coopers!

Core Range

South Pacific Ale

We’ve used New Zealand hops in our version of this new Australian style, adding kaffir lime, passion fruit and berry flavours. A light bitterness balances this aromatic easy drinking South Pacific Pale Ale.

Adopting the brewing techniques used by the original brewers, we have faithfully recreated the style using a touch of Galaxy backed by some awesome New Zealand hops.

Australian Pale Ale

In the Great Aussie Tradition, this Australian Pale Ale is easy drinking with a hint of familiar bittering hops and a mild malt profile, making it perfect for enjoying on warm summer days as well as by the fire on cool winter evenings. Its light character makes it a great session ale.

Fresh Rice Lager

As is traditional with Japanese Fresh Beer ours is also unfiltered and unpasteurised.
Flaked rice and pilsner malt come together to create a light, crisp and dry Japanese style lager. Perfect on a hot day or anytime you have a thirst.

Good Witch

Rye Blonde

This malt driven American Pale ale has been given a fresh twist with the addition of southern hemisphere hops. Rye malt adds a tart and creamy finish, which combined with the orange rind and passion fruit character of the hops delivers a clean and balanced summer ale.

We left out the bitterness and replaced it with a rye tartness. Very pleasant indeed.

Pavlova IPA

Pavlova. New Zealand or Australian? Made with New Zealand hops and Victorian malt, our Pavlova IPA is a little of both. A West Coast style IPA with a neutral yeast, the hops rule to make a light and crisp ale full of peach, passion fruit and plum. A dash of Munich malt brings a toast malt balance.

We first launched this beer as “Pavlova NZ IPA” to emphasize the use of New Zealand hops. Since launch, the new style “NZ IPA” came into being. Our Pavlova is under 6.5% so didn’t meet the style, so we renamed it.

Brain Freeze NEIPA

A late boil addition of Nectaron and Taiheke NZ hops keeps the bitterness to a minimum while allowing intense hop flavour to burst through. Double dry hopped, Nectaron brings intense tropical pineapple, passion fruit and stone fruit characters with Taiheke playing a support role adding grapefruit and lime. Vienna malt adds a subtle nutty aroma with rolled barley and oats adding a smooth finish. This is one intense
New England India Pale Ale.

Sixty Shilling

Scottish Light

This 60 Shilling Scottish Light Ale combines mellow caramel and bread notes with a subtle spice hop finish.

Unlike modern light beers, this one is dark and complex.

Extra Special Bitter

Based on the local fare of Gloucestershire UK, this Best Bitter is well balanced with bitterness slightly dominating over an earthy hop presence. A creamy and soft caramel sweetness finishes with mineral dry notes. Great all year round. The brewer’s favourite.

Batch 42

English IPA

Don’t Panic! Batch 42 English IPA is here! Goldings, Fuggles, Pacifica and Green Bullet hops combine to make a delightful English IPA.
A hop driven bitterness with earth, pine and herbal notes is balanced by a solid malt backbone delivering a pleasantly dry English India Pale Ale with a twist.

This stout is made in the classic English style with rolled oats.

American Brown Ale

The roots of this style lie with American home brewers who brew it with a big malt presence. This American Brown Ale has a malt chocolate punch with a hint of coffee. The lightly hopped fruity character allows the malt to stand out.
The full bodied warming feel of this dark ale is reflected in its ruby tinged darkness.

This beer morphed from a home brew recipe first brewed some twenty years ago. Apart from upscaling the brew quantity, it has had little modification since. Our Brown Ale lovers would most likely revolt if it ever did change.

Strong Bitter

Strong Bitter 6.1% decal

A somewhat bitter ale is contrasted by a well balanced mix of malt and hops. Subtle spice and citrus-pine notes are combined with a creamy caramel malt profile to create an easy drinking ale.

First brewed by accident when the brewer had a brain fart and totally misread the grain bill for the Saison he was meant to be brewing.
The mistake was realised during the mash. With some rapid recipe development taking place, the hop schedule was modified (obviously) and using available hops, a cracking new beer was created.

A9 to Thurso Scottish Export 80 shilling

The A9 to Thurso is full of malt with mellow caramel and light bread notes.
A hint of orange rind adds complexity to the familiar earth and spice notes of English hops.
This is all supported by a smooth clean bitterness which delivers a well balanced malt driven Scottish Ale.

This beer was originally created for GABS 2017. Created using party gyle method where the late runnings of both batches were made into a sixty shilling light ale.

Our Cherry Berliner Weisse has arrived in time for Oktoberfest. Using the traditional decoction brew method and kettle souring, this German style wheat ale is fruity and pleasantly sour.

Vienna Amber Lager 6.4% decal

Using traditional Hersbrucker and Saaz hops we have created a true to style hoppy and bold malt forward amber lager.
A traditional double decoction brew process adds a mellow bread and toast malt character.
The late addition hops keep bitterness low while imparting floral and spice notes. A gentle creaminess keeps the alcohol in check.

Like Liam*, this is our first Irish Red. Amber red in appearance, we present a malt driven ale with toast and biscuit notes.
A small addition of roasted barley adds a dry and slightly bitter character.
True to style, we balance this ale with traditional English noble hops.

Blueberry Berliner Weisse

Blueberry Berliner Weisse decal

Blueberries add a balancing sweetness to this traditional double decoction brew. Light bread notes enhance this refreshing and subtle kettle soured ale.

From the 1970’s the style went from lightly sour to extremely so. Publicans added flavoured sugar syrups to compensate making the beer sickly sweet also.

Our interpretation precedes this era to recreate a subtle fruity sourness that won’t have you pulling faces.

Ginger Beer

Ginger Beer decal

Our first limited release beer is made from fresh ginger root added to the boil for 10 minutes. A warming big ginger presence is coupled with subtle citrus freshness. It is truly a beer for every season.

This was our first batch made on our pilot system and the brewers first attempt at making a beer from fresh ginger root. The brew was overpowering so was cut with 35% South Pacific Ale which added a complementing citrus note. Ten grams fresh root per litre is ample.
